Every time I am trying out a new recipe I am always tempted to modify it by making it more nutritional (for example, reducing the amount of sugar used and substituting white flour with whole wheat).
This turned out really well! Here you go:
Dairy Free Chocolate Zucchini Loaf
1 cup all-purpose flour
1 cup whole-wheat flour
½ cup quinoa flakes
½ cup cocoa powder
1 ½ tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp Salt
1 cup of brown sugar
1/3 cup vegetable oil (I used melted coconut oil)
2 tsp vanilla
2 cups packed, grated zucchini (I used a food processor to make it very mushy)
½ cup chocolate chips
8 x 4 inch loaf pans
Combine flour, cocoa, baking powder, soda, cinnamon, and salt.
In another bowl whisk together sugar, eggs, oil, and vanilla. Stir in zucchini.
Add dry ingredients to wet. Stir well. Fold in chocolate chips.
Bake in 350F for 50 min.
